Things I Love Thursday #TILT Passover, Cross-fit, Vegan mini donuts, and dinners cooked.
I have a lot of things to Love today. Great things are brewing, we’re going to Boston tomorrow, I did my first CrossFit class on Wednesday morning, JC cooked a simply fantastic dinner on Tuesday, and I made vegan mini donuts.
Yesterday was my first Intro to CrossFit class at Totum Fitness and it was amazing, and also a grand torment. I woke up earlier than ever before (at least for reasons other than air travel) to the 6:30am class and it actually left me in really high spirits for most of the day.
But I’m also also sore. Oh so very sore. Immediately after cross-fit I experienced super wobbly legs combined with a great sense of personal satisfaction. In some odd masochistic delight, most of my favourite workouts have been ones that result in me not being fully functional the next day (which did happen with CrossFit) or vomiting from physical exertion (which did not happen with CrossFit). I think CrossFit might make that happen for me, and I’m really excited. (no jokes)
As a result, I’ve been reading about delayed onset muscle soreness and vegan crossfitters.
On Tuesday JC made dinner, I love when he makes dinner because he finds fantastic recipes and then executes them perfectly. He made The Kitchn’s Pasta with Butternut Squash, Sage, and Pine Nuts and it made a perfect dinner paired with a bottle of red wine, but made for an even better lunch at work the next day.
I also experimented with making some vegan mini donuts in the last few days and I think they turned out great. I’m going to keep working on them, and eventually, I should have a recipe I’m happy with (that I can share!)
I’m really looking forward to our trip to Boston starting tomorrow, and I’m hoping to take lots of pictures while I’m there. On my last trip there, I really got a sense of history and culture, but didn’t get to explore more than gaming culture at PAX East. This time we will have more time to work with.
And just a reminder, today is the last day to sign up for the Vegan Foodie Blogger Swap, so please participate and learn more here, I’m really excited to be part of it, and I’m looking forward to pairing people up.
