Naleśniki – Polish Crepes – Vegan Mofo

Happy first day of Vegan Mofo! I wanted to start things off with one of my favourite childhood memories.When I was little one of my fondest morning memories is when my mom would make naleśniki (Na-leh-shniki.) Watching her make them always seemed so magical because what was once a liquid, seemed to defy gravity – clinging to the pan, changing colour, and turning into something delicious. I would sit at the kitchen table, we would listen to the CBC, we would talk, all while she made breakfast. There would be two typical fillings, a sweetened cheese one made with quark or some kind of stewed fruit or jam. My favourite of course, would be one with fruit, so that’s what I made this morning, finally, for my own family.  When my mom made it, it was topped off with a vanilla sugar thick cream – this morning I made a quick cream with maple syrup, coconut yogurt, and some vanilla bean. Before I went vegan, she would use a piece of bacon to grease the pan,  but eventually, once I went vegan she would still make ones for me with oil, filled with fruit, and dusted with icing sugar. Local Vegetable Recipes – Thanks Green Earth Organics

For the last couple of months we’ve been getting a local box of fruits and vegetables delivered to our house every second Friday from Green Earth Organics. I was really drawn to them because of their commitment to social responsibility, and especially because they donate some of their revenue to local non-profits. Every week has been a bit of an adventure, because there are some vegetables we’ve received that I either would never have purchased, or hadn’t even been aware of. I opted for the “local” organic box. They have other boxes, non local organic boxes in three different sizes. I wouldn’t mind a bigger local box, but the one we’ve been getting has been good enough so far. This weeks local bin items: Garlic cloves Spartan apples Yellow Potatoes Black radish Cremini Mushrooms Daikon Turnip Living kale Shallots So every week, I try and find or create new and interesting recipes to really utilize our grocery box.

MoFo’er Monday – Appleicious recipes from the first two days of VeganMoFo

So it’s MoFo’er Monday or at least what’s left of it, and this is the day I’ve decided to look through the past weeks posts and find recipes by other MoFo folks to make at home. You’d think after only two days, and so many people only starting up on Monday that there wouldn’t be enough recipes to choose from. But that’s not even possible. So many excited vegans blogging about food, even just 48 hours leads to 100’s of choices. The problem isn’t finding an appealing recipe, it’s deciding on one or two things to make, and not filling the house up with too much food. Well, yesterday J and I went apple picking at Applewood Farms in Stouffville, ON. It’s about 40 minutes outside of Toronto. They have lots of apples to choose from (including cortlands, golden delicious, red delicious and spartans) as well as a winery/cidery. We ended up running out of time to do a nice slow wander around the apple orchards, but I still had a great time. I’ve never eaten an apple straight off the tree before, so that was an awesome experience (and the flavour is unbelievable). Now, while we didn’t have much time to pick apples, we still came home with four bags of them. Which made the choice of what recipes to focus on slightly easier… I was going to make things… with apples!
