I realized as I was making my list that it might be helpful to other people considering the book. <\/p>\n\n\n\n<p>I think it&#8217;s a beautiful cookbook whether you&#8217;re vegan or not  &#8211; but reading through it, I also found it fairly vegan friendly, and it&#8217;s also full of rich stories of countries and places and individuals (especially grandma&#8217;s) that live in or with heritage from 8 countries in Africa. <\/p>\n\n\n\n<p>The book was enjoyable to read through without having made anything yet &#8211; the discussions of foodways in Africa &#8211; in the way that it explores the intersection of food in culture, traditions, and history. They look at spice ways and historical colonizer impacts and influences and more. <\/p>\n\n\n\n<p>On to the recipes! If it&#8217;s listed below, it&#8217;s vegan by default or with only small modifications as indicated. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter One &#8211; Eritrea<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Kicha (Eritrean flatbread)<\/li><li>Zebhi Hamli (Stewed Spinach)<\/li><li>Shiro (ground chickpea stew)<\/li><li>Shahan Ful (Mashed Lima&#8217;s with Onions, Tomatoes, and Chiles)<\/li><li>Buna (Eritrean coffee, with description of coffee ceremony)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter Two &#8211; Somalia<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Xawaash Spice Mix (pronounced HA-wash) (<a href=\"https:\/\/www.instagram.com\/p\/CKuQW08DVfu\/\" target=\"_blank\" rel=\"noreferrer noopener\">spices look so great in the pan<\/a>)<\/li><li>Sabaayad (somali flatbreads) &#8211; this one has whole milk in it, but I would like to try making the recipe with some higher fat soy milk or coconut milk<\/li><li>Somali Cilantro and Green Chile Pepper Sauce<\/li><li>Canjeero (Sourdough Pancakes)<\/li><li>Bariis (Basmati Rice Pilaf with Raisins)<\/li><li>Shaah Cadays (Somali Spiced Tea with Milk) &#8211; this has milk, but I believe would be easy enough to make with a plant based milk.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter Three &#8211; Kenya<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Kachumbari (Tomato and Onion Salads)<\/li><li>Mango Chili Sauce<\/li><li>Sauteed Cabbage<\/li><li>Ma Penny&#8217;s Mukimo (Mashed green split peas, corn, and potatoes) &#8211; this calls for butter, but you know what to do.<\/li><li>Sukuma Wiki (greens with tomatoes)<\/li><li>Ma Wambui&#8217;s Mikimo with Onions and Greens (<a rel=\"noreferrer noopener\" href=\"https:\/\/www.instagram.com\/p\/CKCpUxRjPtB\/\" target=\"_blank\">photos<\/a>)<\/li><li>Kunde (Black-eyed Peas and Tomatoes in Peanut Sauce) (<a rel=\"noreferrer noopener\" href=\"https:\/\/www.instagram.com\/p\/CMe4K4EDwZn\/\" target=\"_blank\">see it my instagram<\/a>) (<a rel=\"noreferrer noopener\" href=\"https:\/\/www.cbc.ca\/life\/food\/kunde-how-to-make-this-marvelous-meal-of-black-eyed-peas-and-tomatoes-in-peanut-sauce-1.5929614\" target=\"_blank\">Link to recipe on the CBC<\/a>)<\/li><li>Basboosa (semolina cake) &#8211; this one calls for eggs and buttermilk, but I know we can do it with some egg replacer and some soymilk+lemonjuice<\/li><li>Fresh Carrot Drink<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter Four &#8211; Tanzania<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Ndizi Kaanga (fried Plantains) &#8211; this calls for butter or ghee, but you know. <\/li><li>Zanzibar Pilau <\/li><li>Quick Stewed Eggplant with Coconut (<a href=\"https:\/\/www.instagram.com\/p\/CKSUF8cDBaY\/\" target=\"_blank\" rel=\"noreferrer noopener\">see it on instagram<\/a>)<\/li><li>Date Bread (calls for eggs and butter)<\/li><li>Mango Juice<\/li><li>Kaimati (Crispy Coconut Dumplings in Cardamom Syrup)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter Five &#8211; Mozambique<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>xima &#8211; smooth cornmeal porridge<\/li><li>Mbowa &#8211; Leafy greens in coconut sauce<\/li><li>Piri piri sauce<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter six &#8211; South Africa<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Chakalaka (spicy vegetable relish)<\/li><li>Imifino (wild greens with corn porridge)<\/li><li>Iced Rooibos Tea with Orange, Cloves, and Cinnamon<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter Seven &#8211; Madagascar<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Mofo Gasy (Yeasted Rice and Coconut Pancakes)<\/li><li>Carrot Salad with Vinaigrette<\/li><li>Tsaramaso Malagasy (Traditional malagasy white beans)<\/li><li>Lasary Legioma (Tomato Relish)<\/li><li>Mofo Akondro (Banana Fritters)<\/li><li>Ginger Spritz (this is a drink that calls for honey, but would be easily replaced with agave or maple syrup, or simple syrup or apple honey, you get it.)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Chapter Eight &#8211; Comoros<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Sweet Pea Soup with Coconut and Ginger<\/li><li>Ambrevades au Curry (Curried Pigeon Peas)<\/li><li>Sweet Vermicelli Noodles with Cardamom and Butter &#8211; yes, you see that butter in the title, but it&#8217;s so easy to replace it with some margarine or some vegan butter. <\/li><li>Watermelon Juice with Lime Ginger and Mint. <\/li><\/ul>\n\n\n\n<p>As you can see, In Bibi&#8217;s Kitchen offers lots of options for vegans, including several main dishes, desserts, and sides. I am looking forward to trying all of these.
