{"id":4396,"date":"2015-02-04T02:20:00","date_gmt":"2015-02-04T07:20:00","guid":{"rendered":"http:\/\/meshell.ca\/blog\/?p=4396"},"modified":"2018-12-28T11:31:52","modified_gmt":"2018-12-28T16:31:52","slug":"vegan-pressure-cooking-review-my-favourite-recipe-a-giveaway","status":"publish","type":"post","link":"https:\/\/meshell.ca\/blog\/vegan-pressure-cooking-review-my-favourite-recipe-a-giveaway\/","title":{"rendered":"Vegan Pressure Cooking &#8211; Review, My Favourite Recipe &#038; A Giveaway"},"content":{"rendered":"<p>As winter lags on in its traditional fashion, and my\u00a0goal for\u00a0February is to eat at home more often,<a href=\"http:\/\/jlgoesvegan.com\/\" target=\"_blank\" rel=\"noopener\"> JL Fields<\/a>&#8216; new book &#8211; <a href=\"http:\/\/jlgoesvegan.com\/books-2\/vegan-pressure-cooking\/\" target=\"_blank\" rel=\"noopener\">Vegan Pressure Cooking<\/a>, couldn&#8217;t have arrived\u00a0at a better time. It is a cookbook filled with straightforward recipes for hearty meals that are finished in\u00a0an hour or less (including prep and cooking) and helpful advice on the hows and whys of pressure cooking.<\/p>\n<p>First of all, a pressure cooker is a vegan&#8217;s best friend. I wish I had one of these in university, and I just wish I could hand them out to everyone looking to cook plant-based for less. With the initial investment of a pressure cooker\u00a0pot (be it electric or stovetop), it pays for itself in time and the ability to cook dry beans quickly and easily (especially for people like me who\u00a0<del>nearly<\/del> never soak their dry beans or legumes.) But\u00a0luckily for us, we didn&#8217;t even have to buy one ourselves &#8211; JC&#8217;s mom got us a\u00a0shiny new\u00a0<a href=\"http:\/\/instantpot.com\/\" target=\"_blank\" rel=\"noopener\">InstantPot<\/a>\u00a0(an electric pressure cooker) for our Non-Denominational Family Gift Exchange\u00a0last month, and ever since I&#8217;ve been using the heck out of it.<\/p>\n<p>The nice thing about JL&#8217;s book is that it starts with a <strong>Pressure Cooker 101<\/strong> &#8211; everything you might want to know about pressure cooking, but didn&#8217;t know to ask. With answers to questions like <em>What kind of pressure cooker should I buy?<\/em> and <em>Will elevation affect cooking times?,\u00a0<\/em>and more. JL ends the introductory chapter off with incredibly helpful pressure cooking time charts which continue to be\u00a0a\u00a0great reference now that I feel more comfortable going rogue with my pressure cooking experiments.<\/p>\n<p>The book is split up into useful functional chapters:<\/p>\n<ul>\n<li>Beans and grains<\/li>\n<li>Soups and stews<\/li>\n<li>One-Pot Meals<\/li>\n<li>Meal Helpers and Veggie sides<\/li>\n<li>Sauces and Dips<\/li>\n<li>Sweet treats<\/li>\n<\/ul>\n<p>Each of these are broken down a bit further, but I found myself gravitating towards the One-Pot Meals and Beans and Grains (thanks to a fantastic subsection on hot breakfasts &#8211; &amp;\u00a0I don&#8217;t even normally like breakfast.) The lovely Apple Pie Steel-Cut Oats (page 48) was great at anytime of the day &#8211;\u00a0I&#8217;ve had it breakfast and for a mid-afternoon snack. Plus\u00a0JC liked it enough to make it again himself one morning.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-4420\" src=\"https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/steel-cut-oatmeal.jpg\" alt=\"steel cut oatmeal\" width=\"747\" height=\"497\" srcset=\"https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/steel-cut-oatmeal.jpg 747w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/steel-cut-oatmeal-300x200.jpg 300w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/steel-cut-oatmeal-250x166.jpg 250w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/steel-cut-oatmeal-150x100.jpg 150w\" sizes=\"(max-width: 747px) 100vw, 747px\" \/><\/p>\n<p>I also saw &#8220;lazy&#8221; and &#8220;tofu scramble&#8221; and knew it was relevant to my interests. \u00a0(Tofu Scramble, page 110)<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-4421\" src=\"https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/Vegan-Pressure-Cooker-Tofu-Scramble.jpg\" alt=\"Vegan Pressure Cooker - Tofu Scramble\" width=\"700\" height=\"467\" srcset=\"https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/Vegan-Pressure-Cooker-Tofu-Scramble.jpg 700w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/Vegan-Pressure-Cooker-Tofu-Scramble-300x200.jpg 300w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/Vegan-Pressure-Cooker-Tofu-Scramble-250x167.jpg 250w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/02\/Vegan-Pressure-Cooker-Tofu-Scramble-150x100.jpg 150w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>I&#8217;m still likely to make tofu scramble in the traditional frying pan fashion, but this was a nice throw-everything-in-a-pot-and-eat-it kind of dish that I could see taking advantage of during one of those tofu-craving moments.<\/p>\n<p>I also made the <a href=\"https:\/\/www.flickr.com\/photos\/prairiev\/15699227763\/in\/photostream\/\" target=\"_blank\" rel=\"noopener\">Basic Seitan<\/a> on page 146, but didn&#8217;t dig the texture as much as I hoped I would (needed more gluten), but I breaded and fried it in the oven with positive results.<\/p>\n<p>One of my favourite recipes was the New World Sz\u00e9kely Goulash which I wanted to share with you &#8211; with the permission of the publisher. Worth noting however that in my experience dishes with sauerkraut can be a bit too much for (some) people &#8211; you might want to try this recipe after rinsing &amp; draining the &#8216;kraut. As for me &#8211; bring it on. (I also added more paprika.)<\/p>\n<p><b>New World Sz\u00e9kely Goulash<\/b><br \/>\n<i>Excerpted from <a href=\"http:\/\/www.qbookshop.com\/products\/214927\/9781592336449\/Vegan-Pressure-Cooking.html\" target=\"_blank\" rel=\"noopener\">Vegan Pressure Cooking<\/a> by <a href=\"http:\/\/www.jlgoesvegan.com\/\" target=\"_blank\" rel=\"noopener\">JL Fields<\/a><\/i><\/p>\n<ul>\n<li>1 cup (200 g) dried chickpeas, soaked for 12 hours or overnight <b>(or not soaked at all..)<\/b><\/li>\n<li>1 teaspoon extra-virgin olive oil<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1\u20442 cup (80 g) half-moon slices yellow onion <strong>(I used one chopped\u00a0yellow onion)<\/strong><\/li>\n<li>1 1\u20442 cups (195 g) chopped carrots <strong>(this ended up being approximately 3 carrots)<\/strong><\/li>\n<li>2 tablespoons (14 g) paprika, plus more for garnish<\/li>\n<li>1 teaspoon freshly ground black pepper, plus more for serving<\/li>\n<li>2 cups (470 ml) vegetable broth<\/li>\n<li>1 cup (245 g) tomato sauce<\/li>\n<li>1 bay leaf<\/li>\n<li>1 to 1 1\u20442 cups (235 to 355 ml) water, or as needed<\/li>\n<li>1 teaspoon sea salt<\/li>\n<li>32 ounces (896 g) sauerkraut, drained <strong>(for reference &#8211; I found that a 750ml jar of sauerkraut weighed approximately 825g)<\/strong><\/li>\n<li>1\u20442 cup (120 g) vegan sour cream <strong>(I used Tofutti)<\/strong><\/li>\n<\/ul>\n<p><a href=\"http:\/\/www.quarryspoon.com\/2015\/01\/new-world-szekely-goulash.html\" target=\"_blank\" rel=\"noopener\">Visit QuarySpoon for the full instructions.<\/a><\/p>\n<h2 style=\"text-align: center;\">NOW.
