{"id":199,"date":"2011-10-07T21:27:00","date_gmt":"2011-10-07T21:27:00","guid":{"rendered":"http:\/\/meshell.ca\/blog\/?p=199"},"modified":"2011-10-07T21:27:00","modified_gmt":"2011-10-07T21:27:00","slug":"free-for-all-friday-kreplach-kaplah","status":"publish","type":"post","link":"https:\/\/meshell.ca\/blog\/free-for-all-friday-kreplach-kaplah\/","title":{"rendered":"Free For All Friday. &#8211; Kreplach Ka&#8217;plah"},"content":{"rendered":"<p>Note: I wrote this yesterday (friday), and didn&#8217;t post it before falling asleep. oops.<\/p>\n<p>Yom Kippur begins tonight (friday) at sundown, so I&#8217;m preparing a little meal for tonight of rutabaga carrot ginger soup and kreplach. I didn&#8217;t have a plan for today, mostly because I hadn&#8217;t known there was a prefasting meal till a few hours ago. I started searching the internet for ideas, and found some lovely little dishes, one of which included kreplach.<\/p>\n<p><center><a href=\"http:\/\/www.flickr.com\/photos\/prairiev\/6220783467\/\" title=\"DSCF9401 by MeShellG, on Flickr\"><img decoding=\"async\" src=\"http:\/\/farm7.static.flickr.com\/6159\/6220783467_fa0245aeab.jpg\" width=\"500\" height=\"375\" alt=\"DSCF9401\"><\/a><\/center><br \/>\nKreplach is a small dumpling usually filled with ground meat, and usually boiled and served in chicken soup. When I saw them I thought&#8230; oooh triangular pierogi, and set off to make some for this early evening. Of course my version was missing real meat or chicken soup, but I did try to keep it close to the original dish.<\/p>\n<p>Normally, the dough contains eggs (in addition to flour and water), but mine just had oil, water and flour. And the resulting dough was beautiful. Just the way it felt while I was&nbsp;kneeing&nbsp;it, I just knew it was the good stuff. After mixing it, and&nbsp;kneading&nbsp;it, and then I had it on my kitchen table ready to be turned into flat little squares.<br \/>\nWell, that&#8217;s the moment that making kreplach also reminded me of the one major thing missing in my kitchen: a rolling pin. Or at least a real rolling pin. I&#8217;ve been using parchment paper wrapped bottles of wine, but I think it might be time to get the real deal soon.<\/p>\n<p><center><a href=\"http:\/\/www.flickr.com\/photos\/prairiev\/6220783947\/\" title=\"DSCF9402 by MeShellG, on Flickr\"><img decoding=\"async\" src=\"http:\/\/farm7.static.flickr.com\/6120\/6220783947_235148d066.jpg\" width=\"500\" height=\"375\" alt=\"DSCF9402\"><\/a><\/center><br \/>\nVegan kreplach wrappers (easy peasy)<\/p>\n<p>2 cups flour<br \/>\n1 tsp salt (I used kosher salt)<br \/>\n1\/4 cup canola oil (you may want to halve this)<br \/>\n1\/2 cup of water<\/p>\n<p>Toss in the flour and salt, make a little nest and pour in the water and oil. Knead the dough till it feels amazing and put it somewhere humid (or stick it in a bag) while you make your filling (or just make your filling first&#8230;)<\/p>\n<p>If I had had mushrooms, I would have made a mushroom onion tvp filling, but instead, I threw together some veggie ground round, with some onions and spices, and hoped for the best. Having helped myself to several spoonfuls of the finished product, I have to say it was good, but I can&#8217;t shake the idea that mushrooms would have made it extra special (so what I&#8217;m saying is&#8230; use mushrooms, they are awesome).<\/p>\n<p><center><a href=\"http:\/\/www.flickr.com\/photos\/prairiev\/6221305110\/\" title=\"DSCF9404 by MeShellG, on Flickr\"><img decoding=\"async\" src=\"http:\/\/farm7.static.flickr.com\/6230\/6221305110_9ae2696cd2.jpg\" width=\"500\" height=\"375\" alt=\"DSCF9404\"><\/a><\/center><br \/>\nRoll your dough out as thinly as possible. I cut the dough into squares, but I&#8217;m sure there are perfect square shaped pastry cutters that would do the job in half the time. <\/p>\n<p><center><a href=\"http:\/\/www.flickr.com\/photos\/prairiev\/6221306072\/\" title=\"DSCF9411 by MeShellG, on Flickr\"><img decoding=\"async\" src=\"http:\/\/farm7.static.flickr.com\/6038\/6221306072_1e41178493.jpg\" width=\"500\" height=\"375\" alt=\"DSCF9411\"><\/a><\/center><\/br><br \/>\nI parboiled the filled dumplings and then fried them in a generous layer of olive oil. I&#8217;m big on being in solidarity with my partner, so I&#8217;m hoping my first &nbsp;one will go okay.
