This recipe is for sweet and spicy cornbread muffins. They make a great morning snack and pair wonderfully with the chili recipe I made <a href=\"http:\/\/blog.prairievegan.com\/2011\/06\/vegan-slow-cooked-chili-soup-of-devil.html\">the other day<\/a>.<\/p>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n<\/p>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"http:\/\/farm4.static.flickr.com\/3291\/5814802817_cf281009c7.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img decoding=\"async\" border=\"0\" height=\"300\" src=\"http:\/\/farm4.static.flickr.com\/3291\/5814802817_cf281009c7.jpg\" width=\"400\" \/><\/a><\/div>\n<p><\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n<b>Sweet and Spicy Cornbread Muffins<\/b><\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1 cup of flour<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1 cup of corn meal<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1\/2 tsp salt<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n3 1\/2 tsp baking powder<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1\/2 tsp baking soda<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\nEgg replacer equivalent to 2 eggs (I used ground flax seed seed)<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1\/4 cup of vegetable oil<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1\/2 cup sugar or sugar substitute<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1 1\/4 cup soy milk<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1 cup corn kernels (fresh or thawed works great)<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n1 tsp paprika (or less, depending on your comfort level)<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\npinch of red pepper flakes<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\nNote:&nbsp;I was making giant muffins (it&#8217;s a large tin of 6) so my timing and temperature might not work for you. Just increase the temperature and shorten the time for a smaller muffin.<\/div>\n<div style=\"margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;\">\n<\/div>\n<ul>\n<li>First thing was to thaw out my frozen corn kernels and heat up my flax seed. With the flax seed it&#8217;s a 1:3 ratio of ground flax seed to water, so 2 Tbsps of flax and 6 Tbsps water, let it boil for a little bit, and make sure to stir it, then set it aside.<\/li>\n<li>Preheat oven 400 degrees F.<\/li>\n<li>In a large bowl, mix together the flour, cornmeal, salt, paprika, sugar, baking soda and baking powder.<\/li>\n<li>In a medium bowl mix together the soymilk, vegetable oil and the flax seed mixture.<\/li>\n<li>add the wet to the dry ingredients, throw in the corn kernels, mix everything together until everything is moistened.<\/li>\n<li>Fill muffin cups 3\/4 full, and sprinkle a little bit of red pepper flakes on top (if you want to crack a little bit of salt on top too, it tastes great.)<\/li>\n<li>leave in the oven 20-25 minutes (check to see if the tops are firm before taking it out!)<\/li>\n<li>Take out, eat, and enjoy.<\/li>\n<\/ul>\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I think cornbread might be one of my favourite foods, I&#8217;ve tried it in so many different varieties, sweet, spicy, salty, grilled, toasted, and everyone one of them has qualities I just love.
