{"id":1157,"date":"2012-10-23T13:16:26","date_gmt":"2012-10-23T17:16:26","guid":{"rendered":"http:\/\/meshell.ca\/blog\/?p=1157"},"modified":"2012-10-24T00:14:14","modified_gmt":"2012-10-24T04:14:14","slug":"vegan-mofo-cats-and-soup","status":"publish","type":"post","link":"https:\/\/meshell.ca\/blog\/vegan-mofo-cats-and-soup\/","title":{"rendered":"Vegan MoFo &#8211; Cats and Soup"},"content":{"rendered":"<p>Last week JC and I started fostering kittens from the <a title=\"Toronto Cat Rescue\" href=\"http:\/\/torontocatrescue.ca\/\">Toronto Cat Rescue<\/a>. We ended up with two &#8220;socialization&#8221; cases from a feral colony. They aren&#8217;t feral, but they are just a little skittish. I&#8217;ve fostered cats in the past, but in Saskatoon with <a title=\"Street Cat Rescue saskatoon\" href=\"streetcat.ca\">Street Cat Rescue<\/a>, but cats are cats no matter where they&#8217;re from, so the process is the same. They&#8217;re currently under\u00a0quarantine\u00a0in one of our bathrooms, a process which is slightly complicated by Emmiecat&#8217;s curiosity, but it&#8217;s not too bad.<\/p>\n<p><center><a title=\"Foster kitty - Neelix by MeShellG, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/prairiev\/8115246320\/\"><img decoding=\"async\" src=\"http:\/\/farm9.staticflickr.com\/8191\/8115246320_3d105a7684_m.jpg\" alt=\"Foster kitty - Neelix\" width=\"221\" height=\"240\" \/><\/a> <a title=\"Foster Cats from Toronto Cat Rescue - Kez by MeShellG, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/prairiev\/8116276899\/\"><img decoding=\"async\" src=\"http:\/\/farm9.staticflickr.com\/8048\/8116276899_1f0a29fdc4_m.jpg\" alt=\"Foster Cats from Toronto Cat Rescue - Kez\" width=\"180\" height=\"240\" \/><\/a><\/center>Neelix (white with a grey patch on the top of his head) and Kez (she&#8217;s black and white) were born (or at least the estimate) is around August 11, 2012. So they are tiny little creatures, but old enough to be on their own. It&#8217;s been interesting to watch as each of their purrsonalities develop and reveal themselves. I imagine it&#8217;s a combination of their increasing comfort level with us humans, and just growing up a little. Kitten development is surprisingly rapid when you compare it with human child development, so they are constantly changing and growing.<\/p>\n<p>This morning I took them in to the Vet for a spay and a neuter, and hopefully their surgeries are both uneventful.<\/p>\n<p><a title=\"Foster Cats from Toronto Cat Rescue - Neelix by MeShellG, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/prairiev\/8116280605\/\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm9.staticflickr.com\/8476\/8116280605_777780a40a.jpg\" alt=\"Foster Cats from Toronto Cat Rescue - Neelix\" width=\"374\" height=\"500\" \/><\/a><\/p>\n<p>On Sunday after <a title=\"Vegan at soupstock\" href=\"https:\/\/meshell.ca\/blog\/vegan-mofo-soupstock-i-came-i-ate-i-ate-some-more\/\">Soupstock<\/a> and visiting Cherry Beach, JC and I (but mostly JC) made a stock and a butternut squash soup. I&#8217;ve been reading a book (the <a href=\"http:\/\/ruhlman.com\/2007\/11\/the-elements-of\/\">Elements of Cooking<\/a>) that\u00a0extols\u00a0the virtues (and superior quality) of a homemade stock (and despite his near chapter length dedication on the superiority of veal based broth (ew)) he reminded me that for most of my life my mother started soup with a homemade broth from\u00a0scratch. And her soup was great. So since then, I&#8217;ve been trying to DIY some stock pre-soup making.<\/p>\n<p><a title=\"Stock in progress by MeShellG, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/prairiev\/8116279483\/\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm9.staticflickr.com\/8055\/8116279483_6844d56bab.jpg\" alt=\"Stock in progress\" width=\"500\" height=\"375\" \/><\/a><\/p>\n<p>For this soup we used Vegan Yum Yum&#8217;s <a title=\"homemade vegetable broth - vegan yum yum\" href=\"http:\/\/veganyumyum.com\/2008\/10\/homemade-vegetable-broth\/\">Homemade Vegetable Broth<\/a> as a guide, but skipped the low sodium tamari soy sauce for the full on sodium experience. The process is actually quite simple, wash and chop some veggies, some people use scraps, and start tossing everything in a pot. I&#8217;m from the school of thought that finely chopped onions, shallots, leeks, carrots, celery and maybe parsnip should start first in a bit of oil. Somewhere a mirepoix was ingrained in me, \u00a0(probably because of my mother) but I didn&#8217;t know what it was called until my brilliant culinary partner (JC) let me know.<\/p>\n<p><a title=\"IMG_1820.JPG (2) by MeShellG, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/prairiev\/8116294740\/\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm9.staticflickr.com\/8186\/8116294740_7bb5b20965.jpg\" alt=\"IMG_1820.JPG (2)\" width=\"500\" height=\"375\" \/><\/a><\/p>\n<p>JC originally made this soup as part of a several course meal in effort to woo me. I think it worked.
