{"id":4635,"date":"2015-04-04T23:00:41","date_gmt":"2015-04-05T03:00:41","guid":{"rendered":"http:\/\/meshell.ca\/blog\/?page_id=4635"},"modified":"2022-04-10T21:21:05","modified_gmt":"2022-04-11T01:21:05","slug":"vegan-sweet-and-sour-mushroom-matzoh-meatballs","status":"publish","type":"page","link":"https:\/\/meshell.ca\/blog\/recipes\/vegan-sweet-and-sour-mushroom-matzoh-meatballs\/","title":{"rendered":"Vegan Sweet and Sour Mushroom Matzoh Meatballs"},"content":{"rendered":"<p>This is based on the recipe for Tangy Sweet &amp; Sour Meatballs\u00a0from Second Helpings Please, primarily the wizardry of creating a sauce from ketchup and ginger ale, or in my case kosher cola.<\/p>\n<p><a href=\"https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/04\/Mushroom-Matzoh-meatballs.jpg\"><img decoding=\"async\" class=\"aligncenter size-full wp-image-4637\" src=\"https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/04\/Mushroom-Matzoh-meatballs.jpg\" alt=\"Mushroom Matzoh meatballs\" width=\"640\" height=\"426\" srcset=\"https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/04\/Mushroom-Matzoh-meatballs.jpg 640w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/04\/Mushroom-Matzoh-meatballs-300x200.jpg 300w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/04\/Mushroom-Matzoh-meatballs-250x166.jpg 250w, https:\/\/meshell.ca\/blog\/wp-content\/uploads\/2015\/04\/Mushroom-Matzoh-meatballs-150x100.jpg 150w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p><strong>Mushroom Matzoh Not-Meatballs<\/strong><\/p>\n<ul>\n<li>2 Tbsp. olive oil<\/li>\n<li>1 lb of chopped crimini mushrooms (or whatever mushrooms you&#8217;re into)<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>1 tsp. kosher salt<\/li>\n<li>2 tsp. freshly ground pepper<\/li>\n<li>1 clove of garlic<\/li>\n<li>1 cup matzoh meal<\/li>\n<li>1 1\/2\u00a0\u00a0tbsps of freshly ground chia seeds<\/li>\n<li>Approximately 4 tbsps of water<\/li>\n<\/ul>\n<p><strong>Sweet and Sour Sauce<\/strong><\/p>\n<ul>\n<li>1 1\/2 cup ketchup<\/li>\n<li>1 cup kosher cola<\/li>\n<li>1 finely chopped tomato<\/li>\n<\/ul>\n<p><strong>Tools<\/strong><\/p>\n<ul>\n<li>A\u00a0medium sized\u00a0dutch oven<\/li>\n<li>Food processor (not necessary, but helpful)<\/li>\n<li>Micro blender<\/li>\n<li>Bowl<\/li>\n<li>Whisk<\/li>\n<li>Oven<\/li>\n<\/ul>\n<p>Preheat oven 350 Degrees Celsius\u00a0<\/p>\n<p>In a food processor added the onion, salt, pepper, and mushrooms and pulse them in a quick burst just to make for smaller mushrooms and onions &#8211; or finely chopped them and mix with the spices.\u00a0<\/p>\n<p>Turn the stovetop to medium, add some oil to the dutch oven and place on burner. Empty the onion mushroom mix into the dutch oven and saute for a few minutes until most of the liquid disappears.<\/p>\n<p>While the onion mushroom mix is sauteing on the stovetop, in a blender, blend together the egg replacer (1 1\/2\u00a0\u00a0tbsps of freshly ground chia seeds) and water, and add it to the bowl. When the mushroom-onion mix is browned, let it cool, and add to the bowl with the egg replacer.<\/p>\n<p>In the same pot, turn the heat down to low-medium, pour in the\u00a0the ketchup and kosher cola into the dutch oven, and whisk it all together. Once it&#8217;s smooth, add the finely chopped tomato, and let it simmer and get back to your not-meatballs.<\/p>\n<p>It&#8217;s time to add matzoh meal to your bowl of mushrooms and mix it all up. Make meatballs, I used my hands, and just estimated sizing.
