{"id":1116,"date":"2012-10-08T23:23:00","date_gmt":"2012-10-09T03:23:00","guid":{"rendered":"http:\/\/meshell.ca\/blog\/?page_id=1116"},"modified":"2012-10-08T23:23:00","modified_gmt":"2012-10-09T03:23:00","slug":"vegan-bread-stuffing-with-cranberries-and-celery","status":"publish","type":"page","link":"https:\/\/meshell.ca\/blog\/recipes\/vegan-bread-stuffing-with-cranberries-and-celery\/","title":{"rendered":"Vegan Bread Stuffing with cranberries and celery."},"content":{"rendered":"<p><a title=\"stuffing by MeShellG, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/prairiev\/5066452874\/\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/farm5.staticflickr.com\/4104\/5066452874_a5384523c6.jpg\" alt=\"stuffing\" width=\"500\" height=\"375\" \/><\/a><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 cups of diced dried bread<br \/>\n2 tbsp vegan magarine (watch out for vitamin D3 &#8211; Earth Balance or Vegan Becel work)<br \/>\n6 stalks chopped celery<br \/>\n2 cloves garlic, pressed<br \/>\n1\/2 tsp dried rosemary<br \/>\n1\/2 tsp sage<br \/>\n0.5 tbsp dried thyme<br \/>\nsliced cranberries (I use about .5 cup)<br \/>\nsalt and pepper to taste<br \/>\n1.5 cup vegetable stock<br \/>\n1\/4 cup non-dairy milk<\/p>\n<p>This works best with an older loaf of bread, but you can always dry out a fresh loaf in the oven for a little while.<\/p>\n<p>Preheat oven to 350 F<\/p>\n<p>Toss the bread, celery, garlic, cranberries and spices together in a large bowl.<\/p>\n<p>Mix the soy\/coconut\/non-dairy milk of your choice, with a vegan fat\u00a0 &#8211; I used melted vegan margarine.
