Vegan Keto Experiment : Week one – Food, Info, Ratios

First of all, a disclaimer: I am not a physician. I am not a nutritionist. I’ll admit to having an academic understanding of biochemistry, and the human body, but I wont delve into it too much for brevity. This is anecdotal single trial human experimentation. For me, this is a temporary experiment, and not something I’d consider as a permanent lifestyle change. I’m also not encouraging this or discouraging it. This is my experience so far. Your millage may vary.

I’ve spent the last 7 days doing a Vegan Keto style diet with JC’s brother. He has been doing a non-veg keto for around a year now, and I’ve been curious about how it would work veganized. Like most low carb, high fat, high protein diets, at first glance, it doesn’t really look very vegan friendly. I enjoy the occasional challenge, and I’ve been feeling stuck in a rut with my food choices lately. I felt like I could use some dramatic food changes in my life, so this week, I’ve done that pretty successfully.

I’m not really one for “going on a diet”, but I am and have been very curious to see how this one would feel and what changes I would experience. I think one of the major benefits of doing it vegan style is the complete elimination of cholesterol, one of the cited issues people mention with low-carb diets. The con of doing it vegan style is that a suddenly a not-so-limited diet (plant based), becomes a lot more limited, and it becomes really essential to make your own food (something that is admittedly easier with a standard keto diet.)

What is the premise of a ketogenic diet/benefits?

As far as I can tell, a ketogenic diet is used by two main groups of people. Those looking to lose weight or people with refractory epilepsy. The latter is the one I found most fascinating when researching this diet, but if you’d like to learn more, you can read more about that on the epilepsy foundation website, pubmed, or on wikipedia (which can lead you to even more information – sources!.) There is also an organization called The Charlie Foundation that promotes the diet to treat childhood epilepsy.

Ketogenic diets “work” because by completely restricting carbohydrates to a small fraction of your daily caloric consumption your body goes into ketosis, where it burns its own fat for fuel rather than relying on carbohydrates for fuel. Since I’m currently in ketosis, my body is currently using ketone bodies for energy – the result of fatty acids broken down in my liver. There are two main ketone bodies, acetoacetate and 3-beta-hydroxybutyrate, that are used for energy (especially during the diet,) while acetone is the third, and is primarily excreted through your skin and urine during ketosis.

The diet generally consists of a ratio where 65% of daily calories come from fat, 30% Protein, and 5% carbohydrates. More info is available here in a quick and easy guide that I had nothing to do with.

Potential Long Term Risks or Claimed Risks or general side effects

How I’ve been doing it:

A vegan keto diet would be really easy to do consuming only shakes consisting of water, protein powder, and coconut oil (or coconut cream/milk), but I still like food a bit too much to let that stand. That said, I have still been supplementing my days with regular protein shakes made with a Hemp/Pea/Rice protein powder I put together on True Nutriton.

I’ve been using My Fitness Pal to track my recipes and caloric intake, and Fitocracy to track my physical activity (as usual). I converted My Fitness Pal to calculate the numbers I was looking for with a chrome extension and the steps covered here: http://cavemanketo.com/configuring-mfp/

Almost everyday: Kale Chips. Washed kale, massaged with (approximately 1tbsp) coconut oil, garlic powder, nutritional yeast, and salt. I baked it at 450 F for 5-7 minutes. I usually turn off the oven at this point and let the kale sit inside for another 5-10 minutes. (recipe: Low Carb, Slow Carb, Urban Vegan’s No-Fail Kale Chips, and so many more are available from nearly every vegan ever.) You might need to use a significantly lower temperature than I did, as some people have found that their kale gets burned at the 450 F. The recipes I’ve linked to mostly use 350 F with a longer baking time (around 12-18 minutes). Your oven may vary!

Day One – Cauliflower, almond, tofu crust pizza.

Cauliflower, almond flour, tofu, and Vegg crust. Topped with a fresh basil pesto, kale and spicy red pepper flakes.

Vegan Keto Pizza.

Blended 1 head of cauliflower, 1/4 cup almond flour, 1/4 block of tofu, 2 tsp coconut oil, 1tsp of nutritional yeast, and 1tsp of prepared Vegg powder with water in a blender. Layered it on to a pizza pan, baked at 475 degrees F for 15 minutes.

While the crust was baking I took around 1 cup of fresh basil leaves, 1tsp coconut oil, salt, added 1/8 block of tofu, nutritional yeast, blended them in the blender in preparation for the crust. Once the crust was done, I painted on the pesto, and tried to leave an even layer all along the pizza. Topped with a few leaves of kale, sprinkled with red pepper flakes, and threw it back in the oven for another 10 minutes.

It turned out with a very quiche-like consistency, it looked too green, and I was really missing the colourful food experience. I could have gotten away with adding some red or yellow pepper or tofu on top, but I didn’t. Other improvements: Pine nuts or macadamias blended into the pesto.

Total Daily Fat/Protein/Carb Ratio: 64/30/6

Day two – Spicy Peanut Stir-Fry

Lunch/Dinner: Spicy peanut sauce stir fry. With Tofu, Spinach, broccoli, garlic, and cilantro. Topped with green onions and crushed cashews. No real recipe besides what I put into my food diary. Everything goes in a pot, except the cashews and cilantro.

This is the day the headache’s started. But that seems to be consistent with the regular keto experience, and general dehydration. I’ve since upped my water intake, and no further problems with head pain or discomfort occurred.

Daily Fat/Protein/Carb Ratio:  64/29/7

Day Three – Cauliflower Sushi Rice

Lunch/Dinner: Cauliflower sushi rice.

Vegan Keto Sushi

This was the most fun because I made this with JC.

Ingredients: 4 Nori Sheets. 1 steamed head of cauliflower. 1 avocado. half a cucumber. Sriracha. 1 tsp sugar free, salt free rice vinegar. Crispy tofu fried in coconut oil. 3 Tbsp Veganaise

I steamed the head of cauliflower until it was fresh crisp, drained it, and then riced it with my whisk in the same pot. Threw in the 1 tsp rice vinegar and Veganaise and mixed well with the same whisk. Voila rice!

I did four different combinations: cucumber and avocado, cucumber, avocado, and cucumber, avocado, & sriracha. I was going to add the crispy tofu, especially to the sriracha one, but we ended up snacking on it in the kitchen instead.

Sushi

For more information on putting together a sushi roll here’s a great illustrated guide. 1 cup of my cauliflower rice was enough to fill the nori roll to semi standard maki size rolls. To cut the roll after you’re done, make sure you have a sharp sharp knife. It makes a HUGE difference.

Day Four – Stuffed Pepper with Eggplant Spinach Curry

Another day, another high fat curry. But stuffed and baked in a small red pepper (which definitely ups the carb count.), but not enough to go over.

Day Five – Tofurkey Tofu Beer Sausage and Tofu Puffs

If you’ve never seen these in your grocery store, you’re missing out. They are pretty fantastic, just puffed, no carbs, all fat and protein.

This is also the first day I had alcohol while in ketosis, and let me tell you, it’s not the usual drinking experience. Alcohol is metabolized first in the grande scheme of things (plus it’s a poison so of course) and I experienced this unpleasant hot creeping feeling after drinking.

Day Six – Fresh Restaurant (Vegan keto outside!) – Big Salad with Tahini Dressing

Day Seven Vegan Laksa(ish) MeShell Style and Disgraceland Brunch

Ingredients: 2 cups of coconut milk, 1 head of broccoli (around 3 cups), 1 red pepper, curry powders, mushrooms, tofu puffs, coconut oil.

Daily Fat/Protein/Carb Ratio: 77/15/8

Challenges:

  • It can be hard to find high fat, low carb, moderate protein foods. Peanut butter, some brands of Tofu, and coconut oil/milk/cream are options for high fat, low carb foods. Blending them all together has resulted in pretty delicious results. Blending high fat foods with high protein foods has been the most successful in terms of reaching the ratio goals.
  • Remembering to eat. Since starting this experiment, eating is unexciting and isn’t interesting to me, I’m not hungry, and if I don’t schedule a meal, I forget to eat. This isn’t necessarily unusual for me even during a normal day, but it’s more pronounced now than ever before.

Noticeable Results:

  • Recovery time post weightlifting seems to have decreased. Muscle soreness seems reduced.
  • My skin isn’t dry, but it isn’t oily either. There is this nice consistent smoothness even when I don’t moisturize (which I don’t do most of the time anyway.)
  • Weight loss. 7% of my body weight just gone. Certainly it’s mostly water, but an unexpected and dramatic drop in the first week. This is neither good nor bad, but it has made chin ups slightly easier (or that might just be psychosomatic.)

So this marks the end of Week One. I’m looking forward to next Monday when JC and I will go out for vegan dim sum or eat a bowl of coronation grapes or a banana. I think the main influence this diet will have on me in the long term is that I will slightly increase my intake of fats and protein, and get fewer of my daily calories from carbohydrates than I was doing before. The keto ratio (65/30/5) is not sustainable for me in the long term (or more accurately, I’m not willing or interested in maintaining the effort it takes to make it work.)

I have a couple of friends doing non-vegan keto diets and wondered how it might translate. You’re going to have to get really creative in the coming weeks!

  4. Can you please elaborate on these Tofu Beer Sausage and Tofu Puffs i have never ever heard of or seen these and google gives me nothing! I must know!

    • I do not know where you live so the gluten fake meats are varied. But tofu puffs are “Inari” sushi shells they are fried tofu that you cut a hole in one side and stuff with sushi rice, and or vegetables. They are often frozen in Asian/Japanese food stores. Sometimes fresh. just ask for inari or tofu pouches. I hope this helps! The gluten just look up the company name and try to find how to get them where you live! I am just not a gluten fan. Even if you are not celiacs gluten is linked to many cognitive and immune disorders. it all makes good sense when you do some reading on it ,at the very least it is hard to digest. Good health.

  5. Thanks for sharing your experience and recipes on a vegan-ketogenic diet. I am getting ready to begin such a diet for health reasons. A local healing arts center is promoting this diet, but with some additional blood glucose and ketone tracking and it is an 8-week process to teach the body to become totally keto-adapted. You only have to go through the process once to keto-adapt and then do a day long fast each week to maintain. Apparently, it takes a full 8-weeks for body to really get the process down. Several weeks for the kidneys to recognize ketones and to stop excreting them so the body can start burning them. So, most weight loss in the initial weeks are due to water loss, not from burning fat.

  6. I gained it all back though. Thats what happens as soon as u stop and eat too many carbs! When I was non-vegan, I went on a keto diet. I lost 80 lbs & hubby lost over 100 lbs. I was so sick of eating beef, chicken & turkey alllll day! Yuck! This with weight training and walking. No heavy cardio is needed. It takes up to 3 days to get into ketosis. You can by ketone strips at Walgreens which you pee on every morning to make sure you are still in ketosis (fat burning mode). The strip should turn dark or pinkish. If it doesn’t then you are out of ketosis and it probably means u over did it on carbs the day before. Drink lots of water. Take electrolites & vitamins. I really want to try this Vegan Ketosis diet. I feel very crabby eating mostly carbs ever since I became Vegan a couple months ago. Thank you so much for all this info you posted. Now I just have to be willing to cook. Argggg

  7. Interesting experiment. I was wondering, from your experience and the research you did prior to the keto experiment, would you consider it “safe” (to follow a keto diet for a week or 2, just as a personal experiment, not as a lifestyle choice or long-term diet) ?

  9. I have been a vegan for 20 years or so. I have been reading about the keto diet but finding that I know for sure I could not eat flesh or even animal secretions because of my ethical beliefs. However, I want to try keto. It sounds like you can’t really do it half way, either. Like just cutting back a lot won’t get me there. So I guess I could just make tofu and veggies with some nuts and coconut milk every night for a while…My family is so carb focused. It’s amazing. I am not sure how to move us away from that and be vegan…open to any and all suggestions…

  10. The risk with this vegan keto experiment is that it is hard to enough and get all the calories you need. A dinner is not enough, you need 3 meals and enough variety to keep you going. You also need to do this for several weeks before you can tell how it’s working for you. I’m not a vegetarian or vegan, but I am on a keto diet.

    • Well, as we are getting deeper into 21st century, it seems more and more realistic that we will eventually start making shakes for daily food consumption. I am making 3-4 shakes a day, and eat only one “real” meal – dinner at home. I love making protein shakes with fruits and berries, make green spicy smoothies, and such. My life changed to better – no headache about what and where to eat or taking huge lunch boxes to work, since I have three meals at work. All my nutrition, minerals, proteins and such are organic, counted, balanced and present. As blog host said – it is really easy to do keto vegan, if you go on shakes. It is only if you like food and cooking too much, when it become a problem.

  11. HEMP SEEDS!!!!!!!! They are the answer to everything vegan-keto. High in healthy fats (lots of omegas), low in carbs and ZERO net carbs, and great source of protein too!!

    I turn them into hemp milk, hemp butter (with mct oil), and hemp cheese (with nutritional yeast which also packs a nice protein punch), and occasionally sprinkle them on-top of whatever meal I’m having.

    I’m not vegan keto by any means, more like pescatarian keto, but finding the right composition for meals is definitely more of a challenge when you don’t have dairy and fatty meats to fall back on. Doing a fat fast right now and its pretty much every form of coconut and hemp lol. The only thing I’ve agonized about giving up is beets 🙁

    • Oh wow, really??? Is there anything HEMP (the cannabis plant) can’t do???

      Already a vegan (all for health reasons), I’ve started getting into ‘sproutarianism’, whereby my diet (I make sure to have great gut health so let’s just say that now) consists of just sprouts (from a wide variety of seeds mind you), and then greens (and a few other colours like reds from chilli etc…). ‘Seeds n weeds’, basically! I mean, with condiments too, like lemon juice, salt, oh and vegetable oils like olive/coconut of course…and other things like garlic when in season.

      I’ve tried intermittent fasting a bit and have been REALLY jealous of Paleo’s whole ketosis thing. Ketosis seems so attractive!

      But maybe with the diet I’m currently looking to try out long term, I can tweak it slightly to enter genuine ketosis anyway??? WOW. Thanks for your comment! I wonder what OTHER seeds are low carb too!!!

    • When you speak of giving up beetroot, is the reason because of their carbohydrate content? 🙂

      • Beets are one of my favorite Carbs and they are so good for you, they cleanse the colon and the blood. Betaines contained in beet also stimulate the functions of the liver 🙂

    Not only am I coming out of an eating disorder of sorts (trying to function on between 500-1200 calories a day) but im also finding that even while my healthy appetite has returned im not really hungry with all the fats and proteins im eating!

    it’s frustrating.

    but I super appreciate the meal ideas too — and the ratios. That is my hardest part.

  15. Due to health issues, I modified my diet to what I later found out was a vegan keto diet, although at the time I had never even heard of ketogenic. Low carb, low protein, low fat. Got outstanding results, but lost an amazing amount of weight. I was overweight to being with, but now am rail thin (think Nazi concentration camp thin). As I saw my body disappearing, I became concerned, and upped my carb intake. My health suffered, back to low everything (only greens, veggies, nuts, seeds). My health improved again, but lost MORE weight, even though I didn’t think It was possible to get lighter. Tried going high protein. Loads of nuts/seeds, and broke from strict vegan with yogurt every day, and liver once or twice a week. Didn’t work, blood tests came back bad. Back to low everything, lost more weight, look like a skeleton when undressed, also became listless: low energy. That’s when I found out about ketogenic, read up on it, and went high fat, low carb, low protein. I am now on 3200 carbs a day, mostly coconut and olive oil, which I keep finding more creative ways to use in meals. Stopped losing weight, energy not super, but much better. Eating fat reduces appetite, so it is hard to make my 3200 quota, but I am doing it. Takes 5 to 10 small meals per day, and occasionally up til 3 AM to get those last couple meals. I have gained maybe 1 or 2 pounds (my scale sucks) in a month.

    Question – Is it possible to gain weight on a low carb, low to moderate protein, high fat diet?

    I am not at all enamored with this diet, but when my blood test scores go up, it scares the living hell out of me, since I don’t especially want to die. However, sure would like to gain some weight.

  16. Oops, I meant to say my current diet is 3200 calories a day. It is not easy to figure the carbs, on account of I make big salads and tomatoes, peppers, eggplant, scallions and most other veggies do have net carbs (total carbs minus fiber), even greens have carbs. But very low carb.

I also appreciate your honesty, such as when you admit that you are not interested enough to perform this diet long term. This post was very readable and has taught me a lot about vegan ketogenic diets.

My naturopath doctor wants me to do the Keto diet and I have been very resistent as I am studying to obtain my holistic nutrition certification and keto goes against almost everything I am learning.
