Vegan MoFo – MoFo Monday and the Beginning of Apple Week.

Like I said on Thursday – We have too many apples. Luckily there are many things that can be done with apples, but too few of them seem to be savory. Well. I’ve followed in the footsteps of other vegan bloggers in the last few weeks and taken their recipes and made them at home. First item on my list was this Apple Spice Muffin recipe from Bite Me (I’m Vegan) (don’t they just look perfect for breakfast?). While getting into the apple peeling, chopping mode, I ended up opting to make some unsweetened apple sauce in my slow cooker. There is always a use for it, especially when I’m baking, so I threw some of it in a jar, and some of it in snack bags in the freezer. My winter instinct to stockpile food for the cold months ahead is in full force. Having gone grocery shopping yesterday, we picked up a couple of beautiful baguettes from ACE bakery, one of them didn’t make it past 7pm last night, drowning in a mix of olive oil and balsamic vinegar. The other one was supposed to turn into crostini today, I decided it would be a waste of sandwich potential. But what kind of sandwich? Serendipity brought me a brilliant and relevant idea from The Verdant Life – Basil Apple Mustard Panini Sandwiches! Where have you been all my life savory apple sandwiches? Vegan MoFo: 30 Days of Vegan Travel – Day Seven – Staycation weekend – Urban Herbivore

This weekend was a nice little break, today it’s back to the grindstone. I finally tried a chimichuri sandwich at Urban Herbivore, and after all that wait, it was… okay. The moment the sad little sandwich was passed over to me in the paper box, I felt sad that I didn’t get a quinoa bowl. Sure it was tasty enough, but it felt oddly like fast food, without the requisite smile. I didn’t have my camera, so cellphone pictures will have to suffice. My lunch companion and I were talking about the many uses of pumpkin. It’s one of my favourite autumn veggies, especially when it’s spiced. I suggested some pie alternative pumpkin dishes, savory options like pumpkin curry or salted roasted pumpkin and some that were sweet but not pie related (pumpkin cinnamon buns, pumpkin cheesecake, pumpkin sorbetto). After all of this pumpkin talk it seemed perfect that when I turned around, I saw a piece of gluten free pumpkin pie in the glass case. My mouth was primed for pumpkin, so I had to order it, and I was not disappointed. Very delicious, and I loved the crust. My only question… does Urban Herbivore have plates? If so… I sure wish I got one.

Epicure Party and Yet Another Quinoa Burger Recipe

Yesterday a friend invited me to an Epicure party. Now, I’ll admit, initially I was skeptical that there would be anything I could sample and enjoy, but I was wrong. Vegan chocolate cake (made with their brand of chocolate cocoa), and lentil burgers (a vegan recipe straight off of their website), that were genuinely good. Who knew. Inspired by the burgers from yesterday and the hot weather, I made Quinoa Burgers for lunch today. They fell apart (I didn’t let them chill long enough before I started cooking) but were still delicious. I feel silly posting a recipe considering that I never listen to any myself, but it’s a decent enough guideline. Yet Another Quinoa Burger Recipe 1 cup cooked quinoa (about 1/2 cup uncooked) 1 cup cooked mashed red kidney beans 1/4 cup cooked brown rice (I’m sure white/jasmine rice would work okay) 1/3 cup ground flax seeds 3 tsp egg replacer whipped with 5tbsp water (I used Ener-G Egg replacer, but there are a bunch availible) 1/4 cup tomato sauce 1 tbsp dijon mustard 3 garlic cloves, pressed/minced 1/2 tsp onion powder 2 tbsp horseradish (find vegan varieties at your local Polish store if you can’t find them at the grocery.) 1 cup breadcrumbs (I used crumbs from a pumpernickle bread I made two weeks ago, whole wheat would work fine. 3 tbsp chopped green chili’s (for something not so spicy puI put in about 7tbsp…) black pepper and salt (whatever makes you happy) Mix everything up, in whatever…
